Pineapple sauce 4 people
150 ml whipped cream
150 ml sour cream
100 g mayonnaise
1 tin crushed pineapple without the juice.

Mix together the pineapple,
mayonnaise,
sour cream & whipped cream. Then
let it stand cold for 1 hour.
Roe sauce 4 people
200 ml sour cream
200 ml mayonnaise
100 g roe
chopped dill
Salt & pepper


Mix all ingredients together, add
salt and pepper after taste. Let it
stand cold for 1 hour.

Lemon sauce 4 people
200 ml mayonnaise
200 ml  sour cream
1 pressed lemon
100 ml fine chopped dill
Salt & pepper

Mix all ingredients together,
add salt and pepper after taste.
Let it stand cold for 1 hour.
Dill sauce 4 people
200 ml  crème fraiche
1 fish stock
2 tbsp dill

Boil crème fraiche and crumbled
fish stock for 1 minute. Add dill and
let simmer for 1 minute.

Herb sauce 4 people
100 ml sour cream
200 ml crème fraiche
1 egg yolk
1 tbsp lemon juice
2 tbsp parsley
2 tbsp chives
1 tsp tarragon
1 tsp chervil
1 tbsp olive oil
cayenne pepper, salt & white pepper

Mix all ingredients together, add seasoning to taste. Let it stand cold for 1 hour.
Luxury sauce 4 people
200 ml light crème fraiche
100 ml light mayonnaise
2 tbsp chilli sauce
1 tsp  mustard
1 tbsp dill
1 tbsp chives
1 tsp lemon pepper
1 tbsp whisky
2 dl fine chopped prawns
2 tbsp roe

Carefully mix all ingredients together.
Let it stand cold for 1 hour.
